Zalivnoye (Beef Tongue Infusion) - Old Russian snack with vodka. I bring to your attention an interesting variation on this theme. This dish consists of two separate appetizers that perfectly complement each other. The tongue itself and the tender, spicy bread base. If the appetizer is followed by a sip of cool vodka, the taste of the dish is greatly enhanced. It is good to serve horseradish or mustard to the tongue, which will increase its gastronomic appeal and shade its flavor. It looks very festive and effective on the table! I want to congratulate the men with this recipe, as well as all defenders of our Motherland on the coming February 23! P. S. Yesterday the Belgians came to visit us and we tested this dish on them. They were very attentive to it among other appetizers! They were fascinated not only by the tongue, but by the bread base on which it was lying. They asked curiously what it was made of :-D

Ingredients for Tongue on a Breadbasket

  • Beef tongue (If veal, 2 pieces) - 1 piece
  • Carrots (for broth) - 1 pc
  • Onion (for broth) - 1 pc
  • Water (for broth) - 2 l
  • Gelatin - 10 g
  • Bread (rye, crumbs) - 500-600 g
  • Butter - 100 g
  • Cream cheese (like "Viola") - 200 g
  • Petiole celery (for the broth) - 1 pc
  • Salt (for broth)
  • Black pepper (peas, for the broth) - 10 units
  • Bay leaf (for the broth) - 2 pcs
  • Garlic - 3 clove
  • Greens (parsley, dill, coriander)

How to cook beef tongue on a bread slide step by step with photos

You need a medium size beef tongue to make this dish. But I bought two small calves' tongues. Tongue should be carefully washed, pour water, when boiling - remove noise, salt, put in the broth peeled onions, carrots, chopped celery stalk. Season with salt and simmer for at least three hours until soft. When the tongue is ready place it under a stream of ice-cold water for a few minutes. Then the tongue can be skinned very easily.

By the time you cut the tongue you need to prepare the bread hill. For this purpose cut the crusts off the bread and turn the crumb into crumbs. Softened butter mix with chopped greens, soft cheese, garlic, bread crumbs (you can add chopped cooked carrots), mix everything well and form a hill on an oval dish.

For the jelly soak the gelatin in a glass of cold boiled water. When it has swollen, add it to 300-400 ml of HOT sifted broth and stir until it is dissolved. Slice the tongue obliquely into 7 mm thick slices. Important Note!!! Tongue tends to darken quickly and become stale when uncovered. So, right up to the point of slicing it needs to be kept in broth. Immediately dip the slices in the jelly.

Put the tongue on the bread hill, so that the slices overlap a little. Then with a brush we liberally smear the jelly on the hill.

We decorate the slide with greens, cranberries and flowers from carrots and egg white.
