This is probably not even a recipe, but an "idea" of cooking. But it turns out original and delicious. Honestly, I don't know how to position this dish. Probably as a "hot appetizer"... it's not a "main" dish... It would be good for a summer cottage or a private home. If it's for a picnic in nature, then you need to be prepared beforehand. In general - read, cook - if you want .. I apologize in advance for not very good photos - in dacha conditions it's not much of a problem..

Ingredients for shish kebab of tongue:


  • Pork Tongue - 4 pcs
  • Sweet pepper (large) - 2 pcs
  • Tomato (medium) - 4 pcs
  • Onion (medium) - 4 pcs
  • Garlic - 5...6 clove
  • Cilantro - 1 bunch.
  • Broth (beef, chicken, water) - 200...500 ml
  • Wheat flour / Flour - 1...2 tablespoon
  • Salt - to taste
  • Black pepper (ground) - to taste

How to cook shish kebab from tongue step by step with photos


Main "set" of products..

Cut vegetables into small cubes, chop herbs..

Put them in a thick-walled tub (I had an old duck-bag in the country), salt it and mix with hands to make them "let out" as much juice as possible..

Tongues "buried" in the vegetables, pour 200...Add 250 ml of broth (you can do with water, too), put it on a small heat and simmer until soft. For example - I cooked it for about 1 hour and 40 minutes. I advise you to put a cup of warm broth next to the stove - vegetables can be different in their juiciness, so it's possible that you will have to add broth in the process..

Cool the tongues, clean them, cut into slices (about 1.5 cm) and string on skewers..

Pour the flour in a dry pan, fry it until it gets a little "browned", stirring all the time. We add decanted broth from vegetables and boil it until it becomes "sour cream"..

Smear tongue slices with this "spread"..

Roast on grill until slight "crispiness". Please note that this is not meat or poultry!!! Cooks very quickly, literally in 4...5 minutes..

Serve. If desired, the leftover vegetable "sauté" can be used as a sauce.. Bon Appétit!!!
