  • Beef liver - 300 g
  • Milk - 200 ml
  • Carrots - 1/2 pc
  • Onion - 2 pcs
  • Chicken egg (boiled) - 2 pcs
  • Butter (soft) - 50 g
  • Vegetable oil (odorless) - 2 tablespoon
  • Hollandaise cheese - 150 g
  • Salt (to taste) - 1 pinch.
  • Black pepper (to taste) - 1 pinch.
  • Soy sauce (Kikkoman TM) - 2 tablespoon
  • Garlic - 1 clove

How to cook liver rafaelki "Valmont" step by step with photos


Pour milk over liver and let stand for half an hour. Drain and coarsely chop.

Chop the onion and carrot coarsely, then finely chop the garlic and make a soy sauce.

Heat enough oil and 20 grams of butter in a frying pan, and fry onion and carrot until light golden brown. Then add the liver and fry a bit, also until golden, then pour the soy sauce and add the garlic, close the lid and simmer for a few minutes until the liver is cooked. If the sauce is not enough, salt and pepper it a little more. Transfer to a bowl and cool.

Rub the egg yolks through an iron sieve and dry on parchment. You can put them on a radiator, or just cook them and leave at room temperature while the yolk dries and sprinkles are made. The crumble must not be completely dry, dry it to the point where you can coat the ball, do not dry it completely! After all, you can't wrap it in fresh yolk, and dry would be unpalatable.

Grind the cooled liver with the vegetables and whites of the eggs, twice.

Then add remaining butter, mix well and roll into balls, put in the fridge for an hour.

Let's make baskets. Grate cheese on a coarse grater and arrange on parchment in circles. Put it in the oven at 200 degrees Celsius. for a few minutes until melted.

While they are hot, remove from parchment and to make a tartlet shape, put them in tin muffin tins, or any small stacks that you have at hand and let cool completely, you can put them in the fridge for 15 minutes.
