Ingredients for an airy omelette with wild rice and vegetables:


  • Wild Rice (Aquatica Mistral) - 100 g
  • Chicken egg - 4 units
  • Salt (to taste)
  • Starch - 1 teaspoon
  • Water - 2 tablespoon
  • Onions - 1 pc
  • Sweet pepper (1 red + 1 yellow) - 2 units
  • Carrots - 100 g
  • White pepper (ground, to taste)
  • Hollandaise cheese - 150 g
  • Salad leaves / Lettuce (leaves, for decoration)
  • Parsley (for decoration)

How to cook an airy omelet with wild rice and vegetables step by step with photos


Pour rice into boiling water (1 portion of rice - 3 servings of water), cook over low heat under a lid for 30 minutes, season with salt at the end of cooking.

Rinse and peel carrots and peppers, cut into thin strips.

Cut onion into half rings. Heat butter in frying pan. Fry onion and lightly fry it.

Add bell pepper and over low heat until softened (about 5 minutes).

Separate egg whites from the yolks. Whisk the egg whites to a stiff foam.

Whisk the egg yolks with 2 tbsp. Tbsp. water, pinch salt and starch. Add the cooked rice.

Then spoon in the whites and mix gently.

Fry each omelet in butter with the lid on until the bottom crust browns. Sprinkle with grated cheese.

Place the omelet on a plate. Put 1/4 of the vegetables and lettuce on one half of the omelet, cover with the other half. Serve the rest of the omelette in the same way.

Serve the omelette with the sauce: put 2-3 sprigs of dill, 2-3 cloves of garlic, 200 gr of sour cream, 0,5 teaspoon curry, salt to taste and beat with a blender.
