Ingredients for eggs "Anglesey":


  • Potatoes (peeled) - 450 g
  • Leeks (2-3, depending on their size)
  • Butter - 50 g
  • Wheat flour / Flour - 50 g
  • Milk - 600 ml
  • Soft cheese (Welsh Carfilly cheese) - 75 g
  • Chicken egg (boiled hard-boiled) - 4 units
  • Salt - to taste
  • Black pepper - to taste

Prepare the products. I made a slightly smaller portion. I guess I didn't find the cheese I was supposed to find in the recipe. No one's ever heard of it. It was written in the recipe that Welsh cheese Caerphilly can be replaced with brynza, but when I googled and read about it and looked at its image I decided that the kind of brynza we sell like Greek feta and Bulgarian brynza would not work, because the cheese has to melt. I replaced it with suluguni and I have no regrets. The butter, as I'm used to, is "EcoMilk".

Chop the leeks finely.

Boil the potatoes in salted water until soft, then drain them well.

Boil the leeks in salted water for 10 minutes, put them aside in a sieve and let them drain well. You can add the onions to the potatoes for the last 10 minutes before they are ready.

Combine the potatoes and onions if they had been boiled separately and mashed potato them.

Season to taste with salt and pepper. If the mashed potatoes are too thin, you can add flour.

Make the cheese sauce. Melt the butter in a heavy-bottomed saucepan.

Stir in the flour and cook for 1 minute.

Then gradually add the milk and bring to the boil.

When the sauce has thickened, add half the cheese and keep stirring until the cheese has completely dissolved.

Then season to taste.

Grease 4 muffin tins with butter and dust them lightly with breadcrumbs or flour.

Use a fork to press the mashed potatoes and onions against the sides of the muffin tin cups. Finely chop the eggs and place in the middle of each mold. For my part, I added some greens to the eggs.

Pour cheese sauce and sprinkle with remaining cheese. Bake quickly under a hot grill for 10-15 minutes until golden brown.
