Ingredients for a snack of eggs with lentil mousse:

  • Lentils (red "Persian" from TM "Mistral") - 0.5 glass
  • Fish (canned or boiled salmon, pink salmon) - 200 g
  • Chicken egg - 4 pcs
  • Butter (more can be added) - 50 g
  • Onion (small onion, preferably purple, red) - 1 pc
  • Pickled cucumber (or pickled) - 1 pc
  • Greens (to serve)

How to cook egg snack with lentil mousse step by step with photos

Needed products. I used a can of freshly canned red mackerel with the broth and I left the mousse without salt.

Boil the lentils in 1 cup of water for about 10 minutes. Boil the eggs, cut them in half lengthwise, take out the yolks. Remove bones from fish. Mix lentils, fish, egg yolks and butter and blend.

You'll get a tender mousse like this. The more butter you add, the softer the taste will be.

Fill the egg whites with mousse. It is convenient to do it with a pastry bag. Garnish with cucumber slices, onion rings and greenery.

The lentils soak up the flavor and aroma of the fish, so they are almost invisible, while adding tenderness to the mousse.

I had quite a bit of mousse left over, so I also made sandwiches with toasted homemade mustard bread. Bon appétit!
