Today I'm going to make baskets like this with oatmeal flakes. Believe me, it will only increase the flavor of the tartlets.

  • Chicken egg (in an omelet) - 3 pcs
  • Tomato - 1/3 kg
  • Sweet pepper (preferably green) - 2 pcs
  • Onions - 1 pc
  • Basil (handful of dried or 2-3 sprigs of fresh)
  • Garlic - 2 clove
  • Olive oil (for scrambled eggs) - 3 tablespoon
  • Wheat flour / Flour (for tartlets) - 50 g
  • Butter (for tartlets) - 100 g
  • Hard cheese (it can be Parmesan, or any other type, even without a pronounced taste) - 100 g
  • Cereal flakes (any, I have whole wheat oats TM "Mistral") - 50 g
  • Salt (and pepper in the tartlets)

How to cook Basque omelet in cheese tartlets step by step with photos

Preheat oven to 220 degrees. It's so easy and so fast. While the tartlets are baking, the omelet is cooked in the pan. But if you just catastrophically can't wake up in the morning and take care of even a simple dough like cheese dough, you can make tartlets from the evening. They are prepared so easily and store (if, of course, the family does not know about them) well enough. So, let's mix the flour with the cereal. I've got whole wheat oats from TM "Mistral ". Most of the time, I buy cereals of different grains and then just mix them in a jar. And the combination is then very tasty in porridge, and in yogurt, and in salads and even in dough. Why don't you try it?. Grate room temperature butter and cheese on a fine grater.

Mix butter and cheese with flour and flakes mixture. Pepper and salt. I was lucky, I just recently bought a flavorful salt with herbs and dried vegetables. It makes such a dramatic change in the flavor of the dish. It kind of makes it brighter. So, if your cheese doesn't have a bright flavor, then this salt, or dry herbs added to the dough will give a bright flavor and aroma to the dough.

On a floured work surface, gently roll out the dough. Since the dough has flakes, it will not roll out very thinly. My dough is about 7mm thick. We cut out the circles and put them into tartlet molds. Such I have silicone muffin tins and even glass cups from pike-perch caviar.

Fry onion in olive oil until golden brown. Then add crushed garlic, bell bell pepper and tomato. Pour half an amount of basil (if fresh) or all of it if the basil is dry. Season with salt and pepper and leave to stew for about 7 minutes until the tomatoes are smooth.

Knead eggs into the pan, one at a time and mix vigorously.

When the eggs have set, remove them from the heat. Sprinkle with the rest of the basil.

Take the ready made baskets out of the oven and let them cool. Take them out of the dish only when they have cooled completely. к. the pastry when hot crumbles very much.

Put the omelette in the tartlet and serve.
