Crespu is a recipe for a French unsweetened omelette tart with different toppings, layered with a creamy tomato sauce. This dish comes from Provence and is served both hot and cold. It's very simple to make, but it looks spectacular. And you can make your own fillings for the omelets.

  • Champignons (small) - 1 pc
  • Green onions (twig) - 1 pc
  • Sweet pepper - 0,5 pc
  • Tomato (firm - medium ) - 1 pc
  • Hard cheese - 30 g
  • Seasoning (Provencal herbs - ground ) - 1 teaspoon
  • Tomato paste (without the slide ) - 2 teaspoon
  • Sour cream (with slide ) - 1 tablespoon
  • Salt (to taste)
  • Black pepper (to taste)
  • Eggs (Large, for five egg pancakes ) - 5 pcs
  • Cream - 5 teaspoon
  • Olive oil (for frying pancakes)
  • Water (cold ) - 5 teaspoon

How to cook omelettes appetizer cake "crêpe" step by step with photos


Chop mushrooms finely,

green onions,

sweet bell pepper,

cheese and

tomatoes (remove seeds and juice).

Toppings are ready!

Chop the provanza herbs.

Mix sour cream and tomato paste.

Now make the omelette pancakes.

Mix egg with 1 teaspoon cream, 1 teaspoon cold water, provan herbs, black pepper and salt.

Whisk with a fork.

Pour the liquid into a pan lightly greased with olive oil. My pan has a diameter of 15 cm. If you have a bigger diameter, you need to increase the number of eggs, otherwise the pancakes will be too thin!

Then put mushrooms, the first filling, on top. Turn up the heat and put the lid on the pan. Bake omelet.

With 4 eggs, red herbs, pepper, salt, 4 teaspoon cream and 4 water repeat the same operation, whisk and make the omelette pancakes. Place the bell bell pepper stuffing on the second one,
