Who says a September morning can't be as fresh and tender as a spring morning?? If there's less and less green outside, there's no stopping us from adding it to our diet. This green omelette in the form of a roll is made very quickly and consists exclusively of healthy products. It's beautiful, fluffy, tender and refreshing - a real treat for the eyes and the stomach.

Ingredients for the "fiona diet" omelet with goat cheese and mint:


  • Chicken egg - 4 pcs
  • Spinach (fresh) - 50 g
  • Cream cheese (goat cheese) - 100 g
  • Mint (fresh leaves) - 2 tablespoon
  • Spices (salt, pepper, to taste)
  • vegetable oil (for frying)

How to cook fiona diet goat cheese omelet with mint step by step with photos


Wash the mint and separate the leaves from the sprigs.

Finely chop the mint leaves and mix with the soft goat cheese. Leave at room temperature to soften the cheese.

Rinse the spinach leaves.

Place spinach in blender and beat eggs. Season with salt and pepper to taste. Grind everything until homogeneous.

We pour the omelette mixture into a frying pan heated with oil. I strongly recommend that you take a small but deep frying pan (no more than 25 cm in diameter), as we want the omelette to be puffy and rather thick.

While frying, lightly stir the omelet to make it a little "chunky".

Once the bottom layer is well fried and the top layer has thickened, turn the omelet over and fry it again from the other side.

Let it cool just a little bit and then put it on a wide board, with some plastic wrap and a bamboo mat (the kind used for rolls), if you have it. Spread evenly the prepared cheese and mint mass on the omelette.

Gently roll up the omelette, pressing it tightly to the stuffing from all sides. The hotter it is at that moment, the easier it will take the desired shape. Leave it in the cling film for a few minutes.

We cut the ready roulade into circles and serve it up warm or cold - it'll be delicious just the same.
