Hard-boiled Poached Eggs on the side

A simple, tasty dish of common and familiar ingredients! An appetizer that spices up any table.
Ingredients for boiled eggs with side dish:

How to cook boiled eggs with side dishes step by step with photos

Peel boiled and cooled potatoes and carrots. Grate carrots in slices, not too long, but it doesn't matter
Dice potatoes into medium sized cubes |

Salted cucumber slices and fresh tomato cubes. I removed the seeds from the tomato, so as not to give excessive juice

Toss canned peas in a sieve to drain the liquid. Peel boiled eggs, cut them in half. |

In a salad bowl, mix all the vegetables with sour cream (leave a bit for serving), salt, pepper, mustard and lemon juice. Adjust to your taste. I sometimes add a little mayonnaise to the sour cream. The mustard can be omitted altogether. |

In a serving dish put the garnish, top with the egg halves, pour the rest of the sour cream and serve. Fresh herbs are welcome!
