Extra tender treat for February 23 that'll melt in your mouth. Happy Holidays to our Defenders! Timbale is a sort of pressed custard, made in a water bath, which makes it taste so good. Millet and spinach give a tangy flavor to the dish.

Ingredients for the millet-spinach custard with tomato sauce:


  • Millet (by Mistral) - 6 tablespoon
  • Chicken egg (well beaten) - 6 pcs
  • Spinach (finely chopped, can be frozen) - 1 pouch.
  • Garlic (minced) - 2
  • Soft cheese (or melted) - 1 pc
  • Nutmeg (ground) - 1 tablespoon
  • Caraway (ground) - 1 teaspoon
  • Olive oil (to grease the molds) - 3 tablespoon
  • White pepper (or ground black to taste) - 1 teaspoon
  • Sugar (brown for cooking porridge) - 1 tablespoon
  • Carrots (for decoration) - 1 pc
  • Corn (for decoration) - 1 tablepoon
  • Tomato paste (for sauce) - 3 tablespoon
  • Milk - 1/2 glass

How to cook millet-spinach timbale with tomato sauce step by step with photos


Take Mistral millet, rinse well and boil according to instructions with 1 tablespoon of sugar until it becomes a porridge

Mix shredded spinach (I took frozen spinach, defrosting it and wringing out excess moisture) with the porridge.

In a separate bowl beat eggs, milk, minced garlic, ground nuts, spices and soft cheese. Add this mixture to the millet porridge. Whisk again.

Well-mixed mixture is spread in abundantly oiled molds, which we put on a tray, where the boiling water is poured, and put in a preheated to 120 degrees oven. And bake it in a water bath for 40 minutes.

Take it out and cool it down.

Serve with tomato sauce and garnish with corn and carrots. For the tomato sauce - stew tomato paste or peeled tomatoes with spices and garlic.
