Crespo is a French snack cake made of omelets with different toppings. The number of layers and fillings can be any. As a filling you can use, for example, fried mushrooms, pickles, spinach, olives, sausage. But since summer is in full swing, I suggest stuffing with greens and tomatoes and bell peppers. It's original, hearty, and bright. Crespas can be served as an appetizer or as a dish in itself.

Ingredients for Omelet Cake "crespu":

Green crusts (2 pieces)

  • Chicken Egg - 4 pcs
  • Green onions (chopped) - 4 tablespoon
  • Greens (dill, parsley) - 4 tablespoon

Red slices (2 pieces)

  • Tomato (medium) - 2 pieces
  • Sweet pepper (or one large, but red) - 2 pcs
  • Chicken egg - 2 pcs

In addition

  • Hard cheese - 200 g
  • Sour cream - 2 tablespoon
  • Tomato sauce (ready-made kebab sauce) - 2 tablespoon
  • Salt (to taste)
  • Black pepper (to taste)
  • butter (for frying) - 50 g

How to cook omelette cake "crêpe" step by step with photos

We make 4 crusts-2 green and 2 red. The ingredients are for two different colored crusts each. Finely chop the onion and herbs. Prepare four plates - put the ready made omelette tarts on each one.

Grate hard cheese on a coarse grater.

Divide the grated cheese into 4 equal portions at once, about the same, let them be on hand.

Heat a frying pan over medium heat, place the butter for frying and while it heats up whip 2 eggs with salt and pepper.

Pour the mixture into the pan, add 2 tablespoons each of the green onions and herbs, stir to combine. Sprinkle with 1/4 part of the cheese and fry over medium heat under a lid like a regular omelet.

Plate the ready green omelet. Fry second crust in the same way.

For the red omelet layers, cut the tomato and red bell pepper in medium slices.

Beat 2 eggs with salt and pepper, pour into a frying pan heated with oil, stir in 1/2 of each of the tomato and bell bell pepper. Sprinkle with grated cheese (convenient when we have already divided the cheese into portions). Fry the omelet under the lid.

Plate the finished red batter on a plate. Fry a second red omelette layer in the same way.

Mix sour cream and tomato sauce. I used ready made tomato sauce "Shish kebab", You can use any tomato sauce, even hotter.

Now assemble the crêpe. Put the green omelette on the serving plate and brush with the mixture.

Then we put the red omelette on top and grease it. Then lay the green omelette and also grease it.

Finish with the red omelette without greasing. Garnish with greens and pickle. Omelette snack cake is ready!
