Quail eggs with smoked red fish

I searched the internet for a recipe for a champagne appetizer. I found a very simple, even the simplest. The author attributes it to French cuisine.

Pour cold water over quail eggs, bring to boil, boil for 3 minutes, cool in cold water. |

Cut smoked fish into slices. Wrap each egg with a fish slice. Put a sprig of dill or some red caviar on top.
Or cut the eggs in half and lay strips of fish on top.
Serve this appetizer as a miniature appetizer. |
