Reapers Omelette

Omelette des moissonneurs is a Provencal rustic dish. It was taken to the fields and put between two slices of bread.

A very easy, delicious recipe. Peel 2 onions, poke a clove in them. |

Put them in a bowl, pour vinegar over them. If onions are not covered completely, add more water. Cover the bowl with a lid or cling film and let it marinate in the fridge for at least 12 hours. |

The next day, remove the onions from the liquid and remove the cloves. Finely slice the onion into half rings. Heat 1 tbsp. Spoon olive oil into a frying pan and fry the onions for 15 minutes over low heat. Season with salt and pepper. Set the onions aside. |

Break eggs into bowl, add milk, salt and pepper. |

Whisk mixture with fork until slightly frothy. |
|
Grease a frying pan with a little olive oil, pour in the eggs and fry on one side. Place onions on one half of the omelet and cover with the other. |
