Stir-fried Eggs with Stuffing

Stir-fried poached eggs are an unusual and original way to serve one of our favorite holiday dishes. The appetizer is very festive and beautiful. Enjoy it!

Ingredients for fried eggs with stuffing:


For the base:

  • Eggs - 6 pcs

For the stuffing:

  • Oyster mushrooms - 80 g
  • Onions - 1 pc
  • Chicken liver - 50 g
  • Mayonnaise - 2 tablespoon
  • Nutmeg (ground) - to taste
  • Sweet paprika - to taste
  • Garlic powder - to taste
  • Coriander (ground) - to taste
  • Black pepper (ground) - to taste
  • Salt - to taste

For stir-fry:

  • Chicken egg - 1 pc
  • Wheat flour / Flour - 100 g
  • Bread crumbs / Breadcrumbs - 100 g
  • Vegetable oil

How to cook fried eggs and stuffing step by step with photos


Dice onion with GALAXY GL2300 food processor.

Put a frying pan on the fire. Pour oil and add shredded onions.

Immediately chop mushrooms into small cubes (I have oyster mushrooms). When onion is lightly browned add mushrooms. Fry until golden brown and turn off the heat.

Boil chicken liver in slightly salted water. Now in the bowl of food processor GALAXY GL2300 add boiled chicken liver and mushrooms sauteed with onion.

Mince the mixture using a food processor.

Boil and peel the eggs. Carefully cut it in half, then cut into whites and yolks.

Crush the egg yolks with a fork.

Add chopped liver and mushrooms and mayonnaise to the egg yolks. Stir well.

Add spices to the stuffing: ground nutmeg, ground coriander, dried garlic, ground black pepper and salt to taste. Stir well.

Add sweet paprika to the stuffing. Stir the stuffing well. Taste it for sure. Stuffing is ready. Cover the stuffing with clingfilm while you fry the egg whites.

Now fry the egg whites in the deep fryer. Prepare three bowls of breadcrumbs: one with wheat flour, one with breadcrumbs and one with beaten egg.

Dip the egg whites in the flour first.

Then dip the egg whites in the beaten egg.

Then put them in the breadcrumbs.

Turn on the frying pan and pour the oil for deep frying into it. Carefully put whites in breadcrumbs in well heated vegetable oil and fry. When the eggs are fried on one side, flip them over to the other side. Fry all the eggs until golden brown. The eggs turn out crispy and beautiful.

When the eggs are fried take them out and set on a paper towel.

Now fill a piping bag with the filling (with the star tip). Pipe the filling onto the egg whites. And so fill all the eggs.

Decorate stuffed eggs with parsley sprigs and sprinkle sweet paprika on top.
