Perhaps no holiday of the year is considered as traditional in terms of cooking as New Year's Eve. It's hard to imagine New Year's Eve without olivier, herring under a fur coat and champagne. Thanks to their universality and quick preparation, egg snacks are also traditionally presented on our holiday tables. Today I will show you three delicious and beautiful variants of these appetizers.

Ingredients for three quick egg appetizers:

  • Quail egg (For appetizers "Flies" - 10 units and for an appetizer "Eggs in bacon" - 8 pieces) - 18 pcs
  • Mayonnaise (For appetizers "Eggs with herring and beets" - 2 tbsp.l. For appetizer "Flour mushrooms" - 2 tbsp.l. For appetizer "Bacon-wrapped eggs" - 4 tbsp.l.) - 8 tablespoon
  • Beets (Boiled. For appetizer "Eggs with herring and beet") - 1/2 Piece
  • Parmesan (For appetizer "Eggs with herring and beets") - 100 g
  • Garlic (For appetizers "Eggs with herring and beets") - 3 clove
  • Onions (For appetizers "Eggs with herring and beets")
  • Herring (Lightly salted. For appetizers "Eggs with herring and beet") - 1 pc
  • Ketchup (For appetizers "Eggs in bacon") - 1 tablespoon

How to cook three quick egg snacks step by step with photos

This appetizer probably tastes a lot like the famous herring under a fur coat. But the addition of parmesan and garlic makes it much more tangy, and the portioned presentation will undoubtedly decorate your holiday table. So we boil the chicken eggs and the beets. I now bake the beets in a multicooker, it's a pity to run a huge oven for one or two carrots. I wrap them in foil, put them in the multicooker, set the mode to Bake for 1 hour. Very convenient and economical, try it! Cut boiled eggs in two halves, peel and grate beets, squeeze out excess moisture and add grated Parmesan.

Take out the yolks, grate them and add to the beet and cheese. Squeeze peeled garlic cloves through a press.

Stir in the beet mixture and add mayonnaise. I used Maheev olive oil. Once again, mix the mixture thoroughly and add salt to taste. Adjust for the saltiness of the herring, I did not add salt.

Fill each half of the egg with beet mixture, put a ring of onion and top with a piece of herring. Decorate with greens and onion rings.

Here we have our first appetizer - "Eggs with herring and beet".

Another delicious and fast appetizer - "Eggs in bacon". Make gravy - mix 4 tablespoon mayonnaise with 1 tablespoon grainy mustard and 1 tablespoon ketchup.

Boil and peel quail eggs and wrap each in strips of bacon.

Heat 1 tablespoon of oil in a pan and place the eggs with the edge of the bacon on the pan, to prevent the bacon from turning. Fry the eggs on all sides so that the bacon becomes crispy and brown. Put the eggs in the sauce, mix gently so that each egg is covered with the sauce, cover with clingfilm and leave in the refrigerator to marinate. Fry small slices of bread in the remaining bacon fat. You can serve them with eggs and it's delicious to dip the croutons into the rest of the sauce.

To serve this way - put eggs on a plate and pour sauce over them. Put croutons and skewers next to it.

Our third variant - "Mushrooms". Despite the fact that the recipe is quite famous, I couldn't help but remind you about it, because it's as simple as it is spectacular, and most importantly - delicious! These fly agarics do not stay on the table, everyone wants to try such a kebab.) And we need just a little - boiled quail eggs, cherry tomatoes and Maheev olive mayonnaise. By the way, the preparation of fly agarics may well be entrusted to the children. It's fun for them and an extra pair of hands for mom.) So, we boil the quail eggs for 3 minutes after boiling, put them in cold water and immediately break the shells. We wait 5 minutes. The water goes under the shell and the eggs are easy to peel.

We cut off a thin layer of cherry tomatoes from the stalks and use a coffee spoon to remove the pulp. After this procedure, turn the tomatoes, cut side down, so that the excess juices run off. Salt and pepper them inside. If you want, you can put a ring of olive, a pickled mushroom or an onion ring inside.

Fill each tomato about 2/3 full with mayonnaise.

Put the cherry tomato cap on the egg stem and pierce it with a skewer. Decorate with parsley leaves and put the parsley leaves on the "cap" Using a matchstick and mayonnaise. You can put mayonnaise on the bottom of each mushroom and dip it in chopped dill.

You get such improvised kebabs. They can be served on a plate sprinkled with herbs, or you can put them in a tall glass - you can save space on the table and amaze your guests with an original serving. You can serve traditionally - sprinkle the plate with finely chopped herbs and "plant" fly agarics on top. You can decorate a salad - fly mushrooms put on short skewers and stick them into the salad sprinkled with greens Guests eat the appetizer first and then proceed, actually, to the salad itself. All in all, there's plenty of room for imagination, it's up to you!
