Ingredients for preserves of capelin:


  • Capelin (fresh-frozen) - 0.5 kg
  • Onions (medium sized) - 1 pc
  • Salt - 1 tablepoon
  • Sugar - 0.5 tablespoon
  • Lemon - 0.5 pcs
  • Black pepper (peas) - 5 units
  • Cloves - 3-5 pcs
  • Vegetable oil

How to cook preserves of capelin step by step with photos


Wash the defrosted capelin and pour salt and sugar on it. Add pepper, cloves and 1 tablespoon of lemon juice. Gently mix and set in fridge over night.

Rinse salted capelin. The rest is a question of taste and your patience. You can just remove the heads and guts or cut into fillets. I used to make these sirloins. This part is the most time consuming.

Next, we cut the onions in thin half rings.

Take a tray and put in layers onions and fillets.

Pour 1 tablespoon of lemon juice on it and pour it in vegetable oil. Put in fridge.
