Among the few things we make at home for the winter takes pride of place carrot caviar. The recipe is quite different from what you see on the site. Preparation is simple, but takes time. The snack comes out moderately spicy, sourish-sweet, and is a sweet deal for a snack table in winter! It's better to cook it in the vegetable season, when everything is nearby, inexpensive and ripe. You can grate carrots on a fine grater, not coarse as we do here, and peel tomatoes. I do not do it, but if you have a desire - it will not be worse.

  • Carrots - 1 kg
  • Onions - 1 kg
  • Tomato - 1 kg
  • Garlic - 8 clove
  • Chili pepper - 1 pc
  • Salt - to taste
  • Vegetable oil - 4 tablespoon

How to cook carrot caviar step by step with photos


Grate carrots on a coarse grater.

Shred the onion into small cubes.

Finely chop tomatoes.

Remove the seeds and de-seeded the bell peppers and finely chop them.

Crush the garlic cloves with a garlic crusher.

Heat vegetable oil in a heavy-based saucepan, fry onion until transparent, add carrots and fry until soft.

Then add the tomatoes and bell peppers, season with salt, stir and simmer under a lid over a low heat until the caviar becomes almost homogeneous, when you cannot distinguish the ingredients from one another. Although, if the tomatoes do not remove the skin, they will still be flecks, but it does not impede taste. Add crushed garlic, stir, take it off the stove. Lay out the caviar hot in glass jars, jars tightly closed, turn over, cover with a towel and let stand for 24 hours. After 24 hours you can taste it. Only without fanaticism you won't be able to leave anything for New Year!

You can serve it on tartlets, on slices of rye bread..
