  • Tomato - 3 pcs
  • Sweet pepper - 2 pcs
  • Onion - 1 pc
  • Parsley - 1 bunch.
  • Garlic - 2 clove
  • Sunflower oil - 3 tablespoon
  • Salt
  • Black pepper

How to cook eggplant caviar step by step with photos


Products needed

Cook whole eggplants in salted water for 1 hour. Remove and press (to let water run off).

Remove skins

Cut eggplants into small cubes

Shred onion into small cubes

Dice tomatoes into small cubes

Dice sweet pepper slices finely

Salt and pepper the vegetables to taste. Finely chop parsley greens.

Grate garlic and add oil.
