Eggplant caviar

Big "+" of this caviar is that the eggplants don't need to be fried.
All other vegetables are added raw!

How to cook eggplant caviar step by step with photos

Cook whole eggplants in salted water for 1 hour. Remove and press (to let water run off). |

Remove skins |

Cut eggplants into small cubes |

Shred onion into small cubes |

Dice tomatoes into small cubes |

Dice sweet pepper slices finely |

Salt and pepper the vegetables to taste. Finely chop parsley greens. |
