My grandma came up with this recipe. She was a hohlushka. And as you know, she was a great hostess! This is the tastiest caviar I've ever had!

Ingredients for Eggplant Caviar "Grandma's":


  • Eggplant - 3 kg
  • Tomato juice (store bought is better to buy juice "Я") - 1 l
  • Sweet pepper (red) - 7 pcs
  • Onions (medium sized heads) - 10 pcs
  • Carrots (large) - 4 pcs
  • Vegetable oil (for frying) - 400 g
  • Chili pepper (to taste) - 2 pcs
  • Salt (coarse) - 3 tablespoon

How to cook eggplant caviar "granny's" Step by step with photos


Boil the eggplants in salted water until very tender.

Cool down a bit and peel off the skins

Chop until smooth.

Sauté the carrots until soft

Sauté the bell peppers until golden brown

Fry onion.

Put eggplant mass into a saucepan with thick bottom and fry in oil stirring for 20 minutes.

Whisk bell peppers in a blender or finely chop them with a knife.

Then add to eggplants all other vegetables, tomato juice and chopped hot pepper, add salt and pepper and stir. Cook over low heat for 40 minutes.

10 minutes before it is ready, whisk the caviar with a blender until it becomes homogeneous. Add bay leaf and pepper to taste.

Spread the caviar into sterile jars and sterilize 0.5 Lt.- 15 min, 1l. - 30 min. Turn it upside down and cover until it cools down.
