The tastiest eggplant caviar. For me of course the combination of pumpkin, eggplant and apple is unusual, I have never been able to try caviar like this before. The caviar will be cooked in the oven, so it will not burn, we will save time and effort (no need to stand at the stove and stir), it will be baked and very tasty. Be sure to sprinkle the caviar with roasted walnuts and cilantro, it's really good, you just can't go away! The caviar can be closed in sterilized jars and enjoyed on cold winter evenings.

Ingredients for Eggplant Caviar with Pumpkin and Apple:


  • Eggplant - 1.5 kg
  • Pumpkin - 1.5 kg
  • Apple - 4 pcs
  • Garlic - 1 pc
  • Onion (large) - 2 pcs
  • Sunflower oil ("IDEAL" sunflower and olive oil mix) - 150 ml
  • Black pepper - 0.5 teaspoon
  • Salt (to taste)

How to cook Eggplant Caviar with Pumpkin and Apple Step by Step with photos


Slice pumpkin and eggplant into small pieces. Put them on a baking tray, do not mix! Add garlic chopped into thick rounds and diced apple. Add diced onion to eggplants.

Season with salt and pepper. Drizzle with sunflower oil "IDEAL" Sunflower oil and olive oil mix.

Mix the vegetables (mix eggplant with onion, and pumpkin with apple and garlic, but do not mix the pumpkin and eggplant itself). Bake in the oven for 45 minutes at 190 degrees.

At the end of the baking time, take out the pan and stir in all the vegetables.

Bake for another 15 minutes at 190 degrees.

Then the caviar can be covered in sterilized jars. Or refrigerate and serve as a snack. Be sure to sprinkle the caviar with roasted walnuts and cilantro, it's delicious, you just can't go away!
