Eggplant caviar without vinegar

Winter Caviar Without Vinegar! It is very, very tasty and no harm at all! Keeps well in the apartment.
For a long time with the Cooks, but only as an observer :) I decided to share my favorite recipe, maybe someone will like it. So, this is my debut :)
I looked through recipes for caviar, but I did not find similar ones.
Ingredients for the eggplant caviar without vinegar:

How to cook eggplant caviar without vinegar step by step with photos

You should wash and peel the eggplant and dice them, then put them on a baking tray that has been generously greased with oil. |

Cover with foil so that the eggplants will bake without drying out. |
|
Wash and put paprika on a rack. |
|
Put all these things in the oven for 1 hour at 180 degrees |

Meanwhile, peel and chop the onions. |
|
Peel and grate carrots (I did it in a food processor) |
|
Sauté carrots with onions in a large frying pan (or in a multicooker :))) |

Blanch the tomatoes. We make a cruciform cut on the tip and dip it into boiling water for 15-20 seconds, then, taking out with a slotted spoon, put it into cold water. Using a knife we peel the skin off the tomato and remove it easily. |

Cut the tomatoes into cubes and put them in the pan. |

It's been one hour. Take the eggplants out of the oven |

And we put them into the main saucepan, where we are going to mix all the ingredients and make our caviar. The pan, preferably with a thick bottom. |

Take out our gorgeous peppers. |
|
Peel it, remove the seeds, dice it and put it next to the eggplant. |
|
Then go carrot and onion and tomatoes. !!! What a flavor!!! Add chopped hot pepper, sugar and salt. Let it simmer on low heat for about 40 minutes. |

Meanwhile wash jars very carefully and sterilize them. (I do it in the microwave for 10 minutes, and boil the lids separately) |

We Spread a caviar on warm jars, we cover!!! With lids and we send in an oven on sterilization at 120 degrees within 15 minutes from the moment of heating of an oven. |

We get out jars, tightly screw up covers and having turned upside down wrap in a warm plaid until full cooling. |
