Dear Boys and Girls, We are in the middle of a mushroom season. If you like mushrooms and if laziness is not your friend, I highly recommend cooking this stuff. This caviar can be stuffed pancakes, pies, and with bread is very delicious. I made it with wild mushrooms and vegetables. Looked through all the recipes for mushroom caviar, but this site did not find it. Come in and help yourself!

Ingredients for mushroom caviar "forest delight":

  • Mushrooms (boiled wood) - 3 kg
  • Carrot (peeled) - 800 g
  • Onion (peeled) - 800 g
  • Celery root (peeled) - 500 g
  • Sweet pepper (peeled from seeds) - 400 g
  • Zucchini (peeled from seeds) - 400 g
  • Garlic (head) - 1 pc
  • Vegetable oil - 450 ml
  • Tomato paste (I have tomato sauce) - 150 ml
  • Black pepper (ground) - 1 teaspoon
  • Chili pepper (ground ) - 0.5 teaspoon
  • Allspice (ground ) - 1 teaspoon
  • Salt (sea. medium grind, no topping) - 2.5 tablespoon

How to cook mushroom caviar "forest delight" step by step with photos

Fry boiled mushrooms in vegetable oil.

Dice onion and bell bell pepper in medium sized pieces, grate carrot and celery (I did it in a food processor) and fry in oil



Celery and bell peppers and at the end add crushed garlic. If you are cooking a small amount of caviar, you can fry all the vegetables together.

Mix the mushrooms and roasted vegetables, put them through a mincer, add shredded zucchini, tomato sauce, spices, salt and mix well. We steal the resulting mass in a thick-walled cauldron and send it to the oven at 180 degrees for 1 hour. While cooking, stir once.

Ready caviar pour into sterilized jars and close.

Cover and leave tightly covered until completely cooled.
