Fried Zucchini Vegetable Caviar

This year the zucchini came out all right, and in great numbers. So my zucchini are overripe ( ( (. There are a lot of recipes on the web site, but I decided to share mine, since it is not fried, and very nutritious for those who eat healthy food ))))). And as a plus - from vegetables already overripe ("unconventional t", so to speak ;) ), and I have both carrots and zucchini are already more than ripe ))))

Ingredients for zucchini caviar without frying:


  • Zucchini (I have 2 large "green" :)) - 1.5 kg
  • Tomato - 500 g
  • White onion - 500 g
  • Garlic (1 head) - 7 clove
  • Carrots - 1 pc
  • Sunflower oil - 1 tablepoon
  • Salt (I have "Tasty Salt" from 12 herbs and vegetables)
  • Vinegar - 1 tablespoon

How to cook zucchini caviar without frying step by step with photos


Wash, peel and cut the zucchini.

Separate the seeds from the pulp. I need the seeds ;))

Grate the zucchini on a grater. (You can, of course, also chop them, but it's more convenient and faster to stew them this way.) Put into sauté pot and simmer until mass is reduced by half.

Grate carrots on a grater.

Put carrots in half boiled mass, stir and bring to the boil.

Finely chop onion.

Add onion to vegetables.

Finely chop tomato.

Add the tomato to the vegetables and continue to stew over low heat.

Peel and crush the garlic and add it to the vegetables. Bring everything to the boil.

Add sunflower oil, vinegar and salt a spoonful at a time to the stewed vegetables, stir and leave on a low heat for 2-3 minutes more. Fill the prepared hot jars with hot caviar 1.5-2 cm below the top of the neck. Cover with lids, put into the pot for sterilization and keep in boiling water for 30-50 minutes, depending on the size of jars (I kept 30 minutes, since the jars are small).

I had some seeds left over from the groceries and to avoid throwing them away, I made the kids zucchini chips. I chopped them up finely, added 2 tablespoon of flour

And I fried them over a high heat with no oil
