This kind of caviar was always made by my grandmother, then my mother, and now me. Very tasty and fast, keeps well, kids love it. A great alternative to zucchini caviar.

Ingredients for Grandma's Pumpkin Caviar:


  • Pumpkin - 800 g
  • Carrots - 2 pcs
  • Garlic - 3 clove
  • Onions - 1 pc
  • Tomato paste (or tomatoes) - 3 tablespoon
  • Sunflower oil - 5 tablespoon
  • Vinegar (9%) - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sugar (to taste)
  • Salt (to taste)

How to cook Grandma's Pumpkin Caviar step by step with photos


Peel and dice pumpkin.

Peel and dice onion and garlic.

Peel and grate carrots.

Heat 3 tablespoons of oil in large saucepan, brown garlic, add onion and sauté until translucent.

Add carrots and pumpkin. Fry at. Then put the lid on and simmer for 30 minutes.

Add tomatoes or tomato paste.

Add soy sauce, sugar, and salt to taste. I took the soy sauce TM Kikkoman. Braise for 5-7 minutes more.

Let cool, add vinegar and remaining oil, blend and crush with a blender.

Spread in sterilized jars, cover and put away for storage. Bon appetit!
