Ingredients for Greek style eggplant caviar:

  • Eggplant - 3 kg
  • Sweet pepper - 500 g
  • Onions - 700 g
  • Tomato - 700 g
  • Garlic - 1 pc
  • Spices (salt, pepper to taste)
  • vegetable oil (for frying) - 400 g
  • Chili pepper - 1 pc
  • Greens - 1 bunch.

How to cook eggplant caviar Greek style step by step with photos

Slice eggplants (you can peel them if you want) and blanch them in boiling water for 15 minutes. If the eggplants are not peeled, add 2 tablespoons of salt to the water.

Chop and fry onion in vegetable oil until golden brown, add eggplants when cooled and fry until brown (about 30 minutes)

Peel the tomatoes from the stalks and chop them into puree

To the tomato puree add bell peppers and bitter peppers and chop them as well.
