This is the second year I've been making green caviar. I found the recipe in a magazine"encore recipe"-It's really good. Thanks to Olga Koroleva for this!!!

Ingredients for Green Tomato Caviar:


  • Tomatoes (green ones) - 3 kg
  • Beets - 1.5 kg
  • Carrots - 1.5 kg
  • Onions - 1 kg
  • Garlic (head) - 1
  • vegetable oil - 0.5 l
  • Salt (with a slide) - 3 tablespoon
  • Sugar - 2 tablespoon
  • Vinegar essence - 2 tablespoon

How to cook green tomato caviar step by step with photos


Grind tomatoes through the meat grinder...

Carrots...

Onions...

And beets.

Add vegetable oil, sugar, eggplant and beetroot. Oil, sugar, salt and 1 tbsp. Tbsp ground black pepper. Stir everything well and put to boil. When it boils, simmer on low heat for 1.5 hours. Stirring constantly.

Add garlic and vinegar 5 minutes before end of cooking.

Pack it in sterilized jars and seal it up.
