I use the quantity of ingredients according to my personal taste, you can add or remove them according to your taste.

Wash, peel and chop the vegetables in arbitrary pieces, chop the carrots more finely, because they need all the time for baking. I cut the tomatoes so they don't burst. Salt everything, sprinkle with your favorite spices, I took Italian herbs, drizzle with vegetable oil, mix. Bake at 180 degrees for about 40-50 minutes until all the vegetables are ready.

We taste and add what we need - salt, sugar, cooking oil, spices, lemon juice or vinegar. If you want to wrap it for the winter, put it in sterile jars and sterilize it. If you store in the cellar, after sterilizing it is enough to pour a thin layer of sunflower oil on top and seal it. If at room temperature, add 1 tablespoon of 9% vinegar and seal it.
