I've been making this caviar for years, it's everyone's favorite, and as soon as I run out of jars, I start making a new batch! The caviar is great for three seasons, and in the summer I take a break! I do not grind the caviar with a blender, but if you make a small amount, it is quite suitable!

Ingredients for onion caviar:


  • Onions - 3 kg
  • Carrots - 1 kg
  • Tomato puree (ready-made) - 500 ml
  • vegetable oil (refined) - 200 ml
  • sugar (1 -1.5 tablespoon, or to taste) - 1 tablespoon
  • Salt (coarse, 4 - 5 Tbsp. l., or to taste) - 4 tablespoon
  • Black pepper (ground, 1 teaspoon or to taste) - 1 teaspoon
  • Vinegar (9%, 6-7 tbsp. l., or to taste) - 7 tablespoon
  • Water (100-150 ml) - 150 ml

How to cook onion caviar step by step with photos


Prepare a roasting pan and a large saucepan suitable for cooking. Peel onions and carrots. Cut the onions into half rings.

Put frying pan and saucepan on heat. Add 2 tablespoons of vegetable oil to the frying pan and 100-150 ml of water to the pan. In the heated frying pan put a few portions of onion (adding oil each time), fry for a few minutes until light golden, and then put them into the pan. Keep the pan on low heat.

After frying all the onions, also in batches, fry the carrots, grated on a coarse grater. Then put them into the pot and stir them occasionally.

When all the vegetables are cooked, add the tomato puree, 1 tablespoon sugar and 4 tablespoons coarse salt. Stir well. Let simmer for 40 to 60 minutes. Adjust salt and sugar to taste during cooking. At the end of cooking, 5-10 minutes, add 1 teaspoon of ground black pepper and 6-7 tablespoon of vinegar, or the amount to your liking.

The end of the process was in the evening, so the photo is dark! The ready caviar in hot to distribute in the prepared sterilized jars. I close with screw caps and wrap until it cools down. Keep in a cool place.
