Ingredients for roasted eggplant caviar for winter:


  • Eggplant - 1 kg
  • Tomato - 0,5 kg
  • Sweet pepper - 0,5 kg
  • Red hot pepper - 2 pcs
  • Onions - 0,5 kg
  • Carrots - 0,5 kg
  • Garlic - 10 clove
  • Salt - 1 tablespoon
  • Sugar - 2 tablespoon
  • Sweet paprika - 1 tablespoon
  • Vinegar - 1 tablespoon
  • Vegetable oil - 1/3 glass

How to cook fried eggplant caviar for winter step by step with photos


The vegetable proportions may vary depending on your taste. Wash and peel all the vegetables. I do not peel eggplants.

Slice. For the onions I use a slicer. Quickly and with almost no tears.

We dice or shred the carrots. The straw is actually prettier in the finished product.

Dice our bell peppers.

Dice tomatoes too.

Well certainly, the eggplants are the pivot of our program.

Pour oil in a heated cauldron. Heat. Then add onion and brown it lightly.

Add carrots to onion and fry.

Then add bell peppers and hot pepper. Try to brown them. Make sure the heat under the cauldron is high.

Then add the tomatoes. They give us a good juice, this is just what we need.

Finally we add the eggplant and garlic. Stir well. It's like the eggplants are in the sauce. We put the lid on, turn down the heat to minimum and stew for 15-20 minutes. The look is so appetizing that we want to scoop up a spoonful and gobble it up without waiting for it to be fully cooked.

All the vegetables have stewed. We add spices and table vinegar, put the lid on and simmer for 5 more minutes.

Eggplant caviar is ready. Spread out in sterile jars, cover, turn the lids down, wrap in a warm blanket and leave until it cools down. I have caviar stored in the pantry. Bon appetit!!!
