Roasted Pumpkin Caviar with Peanuts

Cooked roasted pumpkin caviar with peanuts

Nutritional Value

A very tasty and healthy caviar of baked vegetables, mostly pumpkin, with a spicy flavor of soy sauce and a slight hint of peanuts! My version of the caviar is spicy, I like everything spicy, but you can make it without chili, adding the peppers to your liking!

How to cook roasted pumpkin caviar with peanuts step by step with photos

I have a small pumpkin like this, weighing 900 grams;

Peel and peel the pumpkin, cut it into small cubes and put it on a greased baking tray;

Add chopped carrots as well;

Add chopped onion, tomato and chilli (instead of chilli, if you don't like spicy, you can add crushed chili pepper or use the pepper you usually add);

Sprinkle paprika, garlic and crushed peanuts over the vegetables and drizzle with oil;

Mix everything and line a thin layer on a baking tray;

Cook at 160 degrees - 30 minutes (until vegetables are soft); Remove from tray, pour soy sauce over vegetables and stir to combine;

Put the ready caviar in jars and cool in the refrigerator; For canning for the winter is recommended to sterilize the jars, covered with a lid, along with caviar, then roll up;

Serve as a snack! Delicious and flavorful!
