I always make several kinds of zucchini caviar. This recipe is the easiest, with minimum ingredients and no need to cut or fry anything. But it makes a very tasty caviar.

Ingredients for the easiest zucchini caviar:


  • Zucchini (already peeled) - 3 kg
  • Chili pepper - 1 pc
  • Garlic - 4 clove
  • Tomato paste (or tomatoes) - 250 g
  • Soy sauce - 1 tablepoon
  • Vinegar - 1 tablespoon
  • Salt (to taste)
  • Sugar (to taste)
  • Sunflower oil - 1/2 glass

How to cook the easiest zucchini caviar step by step with photos


Rinse, peel and slice vegetables.

Grind zucchini and bell peppers through a meat grinder.

Add tomato paste (or tomatoes).

Braise for 40 minutes.

Add garlic, oil and vinegar and simmer for another 10 minutes.

Finally add the soy sauce, salt and sugar. I took the soy sauce from TM Kikkoman.

Spread into sterilized jars, cover and put away for storage. Bon appetit!
