Vegetable Caviar with Pumpkin

This recipe was born after a question from my husband, looking at a 16-pound beauty he asked "Do you cook caviar with pumpkin??". I decided to try it, we liked the result very much.

How to cook vegetable caviar with pumpkin step by step with photos

Here are the ingredients we need. no sugar or vinegar in the picture. The weight of the food is pure. |

Wash and peel all the vegetables, then cut them into large chunks. |
|
Grate pumpkin and carrot on a coarse grater. Put them in a saucepan. |
|
Chop onion and bell pepper into julienne strips and add to pumpkin and carrot in pan.
Add oil and put on medium heat, stirring until the pumpkin juices run clear. |
|
Then add the tomato paste, salt, sugar and pepper. Cook all together for about 30 minutes at a gentle simmer. After 20 minutes, add the garlic pierced through the press.
Next, purée with a blender, return the pot to the fire, add the vinegar and as soon as it boils, remove from the heat. |

Spread the hot caviar in sterilized jars, seal. You can eat it right away.
This amount of products made almost 3 liters of caviar. |
