Winter Eggplant Caviar

Very tasty eggplant caviar for winter. Keeps very well. Of course mayonnaise is bad, but it's a delicious recipe. I think there is no such recipe on the site, if found my version will be removed. We make with my mom for about 5 years, all like this is not an ordinary caviar. I would be very happy if someone could also use this recipe.
Ingredients for eggplant caviar for winter:

(30%, you can use higher fat, then the caviar will be fattier)

How to cook eggplant caviar for winter step by step with photos

Wash and peel eggplants and cut them in small cubes. Season with 2 tbsp. Spoons of salt, let stand for 30 minutes until liquid forms. |

Squeeze eggplants from liquid and fry in vegetable oil until half-ready. |

Put the fried eggplants in a big saucepan for 7 liters (I had a big one) |

Prepare seasoning: Grind 15 red bell peppers (I had 10 pint red and 5 pint yellow bell peppers), garlic, hot pepper. |

Pour seasoning into eggplant pan. Stir in . |

Taste and season with sugar, vinegar and salt. Stir and simmer for 1 hour |

Add 30% mayonnaise 200g to the pan with the caviar, stir well and simmer for 15 minutes more. |
|
Put it in sterilized jars. (I have almost 6 half-liter jars). Enjoy!! |
