Zucchini Caviar

I want to share with you a recipe for caviar, the preparation of which takes a long time, but it is worth it. It's a preparation for the winter, and once you open it once, you can't stop reaching for the next jar. After trying many recipes, I stopped at this one. I searched all the recipes on this site and could not find this one.

How to cook zucchini caviar step by step with photos

Let's start by making all the ingredients for our caviar. I'm making a half portion of zucchinis instead of zucchinis today, since I don't have a big pot. |

We wash, peel and grate the pâtissons. |

Do the same with the carrots. |
|
Peel onion and dice it not too finely. |

Put all our ingredients in a saucepan, preferably aluminum. It's less sticky. And add the sunflower oil, vinegar, 1 glass of sugar, salt and boil it. Bring it to a boil, turn down the heat and simmer for an hour. |

In an hour we add peeled garlic, 0.5 glass of sugar, tomato paste and red hot pepper. Return to simmer on low heat for 2 hours, stirring occasionally. |

After the time has passed, we spread out our caviar in sterilized jars and close them. |
|
Output from 1 portion - 8-9 half-liter jars. |
