Ingredients for Courgette Caviar:


  • Zucchini - 3 kg
  • Onions - 1 kg
  • Salt - 1 tablepoon
  • Sunflower oil - 1 glass
  • Mayonnaise - 250 ml
  • Ketchup (tomato paste or concentrated tomato juice) - 1 glass

How to cook zucchini caviar step by step with photos


1. Wash and peel 3 kg of zucchinis, remove seeds and pulp

2. Peel the onions

3. Dice the zucchinis into small cubes. Finely chop the onion.

4. Fry zucchinis in sunflower oil. Fry onion until golden brown in sunflower oil. Preferably fry in separate frying pans!

5. Put everything in a pan and stir

6. Add 1tablespoon salt, 1tbsp. oil (allow for frying), 250 ml mayonnaise. Stir well. Cook over low heat for 2 hours.

7. Add 1tbsp. tomato sauce. Braise for 15-20 minutes.

8. Pour into jars and seal. As the caviar with mayonnaise jars put in the cellar or refrigerator. Use over 3 to 5 months!
