Ingredients for Courgette Caviar:

  • Sunflower oil - 500 ml
  • Onions - 1 kg
  • Zucchini - 6 kg
  • Mayonnaise - 500 g
  • Tomato paste - 500 g
  • Sugar - 4 tablespoon
  • Salt - 3 tablespoon
  • Vinegar - 6 tablespoon
  • Garlic - 200 g

How to cook zucchini caviar step by step with photos

Cut onion into small cubes and braise in the sunflower oil for 20 minutes

Wash the zucchini. Remove the seeds, if any. Grate everything with a medium slicer. If you want a more homogeneous mixture, use a coarser grater, or in the middle of cooking, grind everything with a blender.

Add the grated zucchini to the onion and simmer for 1 hour. Do not forget to stir. It is best to put the cauldron on a cauldron that has a special flame-spreader, not on the fire itself.

Afterwards add mayonnaise, tomato paste, sugar and salt. Simmer for another 50 minutes.

Then add the 9% vinegar and simmer for 5 minutes.

Add minced garlic and simmer for another 5 minutes. Close and cover until it cools down. The output is 15 half-liter jars

I want to share my experience with different companies of tomato paste. In the photo on the right side I used thick tomato paste, and on the left side I used gravy paste. I think I prefer the thick pasta.
