I dare to offer you my version of cooking this caviar, after looking through all the recipes on this site, I could not find such a recipe (I wanted to attach my photo). This recipe is very simple and almost dietary.

Ingredients for zucchini caviar:

  • Zucchini (weight in peeled form) - 3 kg
  • Carrots (more can be added) - 500 g
  • Onions - 1 kg
  • Vegetable oil - 200 ml
  • Sugar - 1 glass
  • Vinegar (9%) - 0.5 glass
  • Tomato paste - 1 glass
  • Salt - 1 tablespoon

How to cook zucchini caviar step by step with photos

This recipe is so easy that I even questioned if I should take a picture step by step. Well, here's what we have. Here are our staples. We wash and peel all the vegetables beforehand. This time I have very young zucchini, so I did not peel them.

Put our zucchini through the meat grinder.

Do the same with the onion and carrot.

We put everything into a pot (this amount of vegetables just fits into a 6-liter pot). We add salt, sugar, oil, tomato paste and vinegar, stir, bring to the boil and cook for 2.5 - 3 hours, stirring occasionally and preferably covered loosely with a lid to avoid splashing.

At the end of boiling we place our caviar in sterilized jars, wrap and store for the winter. The caviar can be kept at room temperature just as well.
