Let's prepare the necessary products |

Rinse and peel the vegetables. Take off the skin of tomatoes and scald them with boiling water. Then cut the vegetables: dice zucchinis and tomatoes, cut onion in half rings, grate carrot. Fry everything separately. Sauté the zucchinis until transparent, and the onions until soft, as they will become pulpy in the meringue. |

Mix the ingredients, blend them with a blender. |

Add salt, sugar and simmer on a low heat for 40 minutes under a lid. Add acetic acid 5 minutes before it is ready. |

Jars should be well washed with baking soda, heated with a small amount of water in a microwave oven for 2-3 minutes. Spread the ready caviar into the jars. I always put the jars on the lid, i.e. е. I turn them upside down and leave them like that until they cool down. Store in the refrigerator. You get about 2.5 to 3 liters of caviar. |
