  • Whitefish (any white salted fish, I have escolar) - 50 g
  • Salmon (any red salted fish, I have salmon) - 50 g
  • Green onions (only the green part, ideally a sibulet) - 2
  • Pink pepper (for decoration)

How to cook harlequin salmon and escolar step by step with photos


1. First freeze both fish. Slice them in thin slices. Using a cutting mould, cut out neat squares and divide them into smaller squares.

2. Place them on the plate in a staggered pattern. Garnish with the green onion and pink pepper
