Ingredients for herring fillet in wine sauce:


  • Herring (medium salted, preferably oily Olutor) - 1 kg
  • Onions - 1 pc
  • bay leaf - 3 pcs
  • Allspice (peas) - 5 units
  • White semi-dry wine - 1 glass
  • Vinegar (wine, white) - 2 tablespoon
  • Sugar - 20 g
  • Cloves - 3 pcs

How to cook herring fillets in wine sauce step by step with photos


Peel and fillet the herring (the most unpleasant part of the job).

Roll herring fillets, pinned together with skewers and place tightly together in a deep salad bowl. I had thick fillets and didn't roll up well.

Put chopped onion rings, bay leaf, allspice, cloves in the boiling water and boil for 5 minutes on low heat under a lid. Add sugar, vinegar and white wine to marinade and boil for 2 minutes more. Taste and cool the marinade with sugar.

Pour the marinade over the herring fillets and chill for 10-12 hours. Make a sandwich and enjoy!
