Ingredients for herring with beet mousse:

  • Herring - 0,5 pcs
  • Beets (medium) - 1 pc
  • Apple (sour) - 0,5 pc
  • Onion - 0,5 pc
  • Mayonnaise (Maheev) - 2 teaspoon
  • Gelatin - 5 g
  • Spices (salt,pepper to taste.)

How to cook herring with beet mousse step by step with photos

For the appetizer I used mayonnaise "Maheev". Mayonnaise Provansal with lemon juice was very successful and harmonious, the taste of the appetizer won from that only.

Soak the gelatin in cool boiled water. Whip the beet in a blender until it becomes a puree. Mix it with mayonnaise, salt and pepper. Melt soaked gelatin and add it to beet puree. Whip the puree and leave in fridge to set. Cut herring, onion and apple into small cubes.

Put a spoonful of beet mousse at the bottom of a glass, then herring, onion and apple mixture. Place beet mousse on top. Decorate with parsley sprigs. Refrigerate for 30 minutes before serving.
