How to cook holiday appetizer "à la sushi" step by step with photos

We boil rice in salted water, but for this appetizer we need to overcook it, so that the rice becomes too sticky and doesn't fall apart while cutting.

Let rice cool down, add balsamic vinegar and sugar, mix it, taste it, and, if necessary, salt it.

Peel the herring, cut it into fillets and remove all bones.

Then we cover any convenient form (I have a usual plastic container) with plastic wrap and put the herring fillets.

On top of the herring lay the rice and Knead it well with a spoon.

Then we cover the rice with the edges of the foil and put it under the press for at least 4 hours. My press is the same container with water.
