Cut the fish with the backbone into small steaks, |

Pile it in a bowl, sprinkle with salt, mix well (but gently so it doesn't fall apart) and set aside to pickle for 4 hours (no fridge). |

Make the marinade: mix all ingredients and add onions, chopped rings. The marinade can be made at once or when the fish has already salted - it is up to you... |

After 4 hours, we rinse the fish well, put it in a bowl with marinade and send it to marinate for another 4 hours in the fridge. That's it, then take it out and enjoy...
If you can't eat the fish right away, which is unlikely, then leave it in the marinade, it only gets tastier (if you can, it is better to marinate the fish longer, I sometimes leave it overnight). |
