Mackerel jerky

Here is a recipe for incredibly delicious, tender mackerel jerky.
Ingredients for dried mackerel:

Mackerel
((I had 900g))

2 pcs

Salt
(with a slide)

1 tablespoon
-
Sugar
(no slide)
-
1 tablespoon
-
Mustard
-
1 teaspoon
How to cook dried mackerel step by step with photos

Fillet freshly frozen mackerel, remove bones and black membranes, rinse thoroughly and pat dry.
Sprinkle salt and rub on each fillet. |

Then sprinkle with sugar. Rub the same on each fillet.
Then rub mustard on each fillet. |
|
We put the fillets in a basket, cover and put in the fridge for 24 hours.
This is how the fish looks like after 24 hours. |

Now we rinse each fillet of mackerel under running water and dry it off with paper towels.
Make a hole 1-2 cm away from the edge of the tip of the fillet and put a double-folded string through the hole. |

Let the fish dry out in the fridge for 24 hours. |

After 24 hours we cut the fish into portions and serve it up.
