Pikeperch Caviar Tartare

The New Year is just around the corner. Time for some interesting and tasty snacks. Here is one of my all time favorite appetizers. It's very easy to make, very fast and it tastes great!.
Ingredients for pike-perch caviar tartare:

Fish Caviar

Caviar
(pike-perch)

100 g
-
White onion
(finely chopped)

1 teaspoon
-
vegetable oil
(odorless)
-
70 g
-
Vinegar
(white wine or white balsamic)
-
0.5 teaspoon
-
Salt
(sea salt)
-
to taste
-
Bread
(white, for croutons)
How to cook pike-perch caviar tartare step by step with photos

Make croutons out of bread. I buy sliced square bread.

Transfer the caviar from the jar to a bowl that is handy for whisking.
Add very finely chopped white onion (as finely as possible). |

Whisk caviar with vegetable oil, a little at a time until it becomes a thick and dense mass. Drizzle with a little wine vinegar, season with salt and continue whisking until the mass has doubled in volume.
Keep in the fridge until serving.
Serve well chilled with croutons.
