Make croutons out of bread. I buy sliced square bread.

Transfer the caviar from the jar to a bowl that is handy for whisking. Add very finely chopped white onion (as finely as possible).

Whisk caviar with vegetable oil, a little at a time until it becomes a thick and dense mass. Drizzle with a little wine vinegar, season with salt and continue whisking until the mass has doubled in volume. Keep in the fridge until serving. Serve well chilled with croutons.

Bon appetit and have a delicious holiday!
