Ingredients for potato mousse in a fur coat:

  • Potatoes - 300 g
  • Leeks - 100 g
  • Shrimps (peeled) - 100 g
  • Dill (to taste)
  • Cream (fat, 30%) - 150 ml
  • Gelatin (in plates) - 10 pcs
  • Salmon (or pink salmon, sliced. slices) - 250 g

How to cook potato mousse in a fur coat step by step with photos

Boil raw potatoes in salted water.

Slice leeks and blanch in salted boiling water for 40 seconds. Put them in a sieve and cover with ice-cold water. Dry.

Peel and mash the potatoes while they are still hot. Whisk well with a pinch of salt.

Add chopped dill, leeks, and shrimp to the potatoes.

Dissolve soaked gelatin in a water bath or in a 600 W microwave for 45 seconds. Add to the potato mixture, stir and gently fold in the cream.

In a cling-film-lined dish, place the fish and potato mousse.

Cover the fish with the mousse, then put in the cling film and chill.

Just before serving, turn the dish upside down, remove the cling film and cut the mousse into about 1 cm thick slices.
