These potatoes come out surprisingly tender, soft and a little sweet. They have a velvety taste and are a lot like fried potatoes, but with fewer calories. The stuffing with green onion, cucumbers and pickled mushrooms will please all fans of simple and tasty dishes.

Ingredients for baked potatoes with filling:


  • Potatoes (large) - 3 pcs
  • Mushrooms (pickled, butter mushrooms) - 3 pcs
  • Green onions (sliced) - 3 tablespoon
  • Cucumber (medium size) - 1 pc
  • Vegetable oil (Oleina) - 2 tablespoon
  • Salt (to taste) - 1/3 teaspoon

How to cook baked potatoes with filling step by step with photos


Peel and wash potatoes, let them dry a little after washing. Put each tuber on foil and rub all over with salt and 1 tsp. teaspoon vegetable oil.

Wrap the potato tuber one by one in foil, forming airtight balls. Place on a baking tray and bake in the oven at 200°C for 1 hour. After this time turn off the oven and leave the potatoes inside for another 15 minutes.

Prepare stuffing. Cut marinated mushrooms into small pieces, leave small mushrooms in whole.

Finely chop green onions and add them to mushrooms.

Chop cucumber into julienne strips and add them to the onion and mushrooms.

Mix mushrooms, cucumber and spring onions in a bowl. Salt to taste and add 1 tbsp. Spoon of vegetable oil. Mix well. Take the potatoes out of the oven, let cool down a bit and unwrap them. Use a teaspoon to find the core of the potatoes and fill them with the mixture. Eat hot!
