Remember? On holiday and New Year's Eve tables we've always had caviar from mushrooms. It was made of dried, fresh, salted or mixed mushrooms. The ingredients of the caviar were put through a meat grinder. It was very tasty. Today I made mushroom caviar from boiled opiate mushrooms with eggplant, onions, carrots and garlic. I crush it to a smooth paste with a food processor.

For the mushroom broth

  • Opyatka (any mushrooms) - 350 g
  • Water - 1.5 l
  • Parsley - 2 sprigs.
  • bay leaf - 1 pc
  • Salt (to taste)

For the caviar

  • Opytes (all boiled opiats from the broth)
  • Eggplant (200 g) - 1 pc
  • Carrots - 1 pc
  • Onions - 1 pc
  • Garlic - 3 clove
  • Butter (replace on fasting days) - 20 g
  • Olive oil (or sunflower oil) - 2 tablespoon
  • Salt (to taste)
  • Black pepper (to taste, optional)

How to cook mushroom caviar of beech pollack with eggplant step by step with photos

Boil the mushrooms. I use frozen chicken mushrooms. I thawed them, rinsed, poured water on them and boiled for 30 minutes. Put two twigs of parsley and salt and put a bay leaf at the end of cooking time. I made such a spicy mushroom broth.

Preparing the vegetables for the caviar. I chop all the vegetables, except for garlic, using the attachment for chopping in the food processor GALAXY GL2300. First the onion, then the carrot and eggplant. I chop them all individually. It's really fast. Just 15 seconds for each vegetable.

Take a saucepan, pour olive oil and add a bit of butter. Heated and melted the butter, put the garlic cloves, crushed with the flat side of a knife. After a minute I put the onions in, gilded them and added the carrots. I didn't fry the vegetables, I simmered them. About 5 minutes after the carrots I put the eggplants. I simmered the vegetables until they were done for about 15 minutes. If you will make caviar during the Lent, do not put butter, replace it with the one on which you will cook the vegetables. With butter - such a festive variant and the caviar is richer and to me, that it tastes better.

Now add the mushrooms. With a slotted spoon I remove the mushrooms from the broth, letting the liquid drain off. They are cooked, we do not need to simmer them for a long time. I also took out the parsley, cooked in the broth, and put them in a saucepan with the vegetables and mushrooms. Cook until all the liquid evaporates. Taste and season with salt and pepper. Remove from heat and let cool.

Place contents of soup pot into the bowl of GALAXY GL2300, knives on low. Smashed the caviar to a smooth homogeneous mass. You can break it up to taste, and this, so that there are small pieces of ingredients left in the caviar. I made a 300 ml jar and a 250 ml jar from the amount of the ingredients I took. I'll save the 300 ml jar for later and drizzle melted butter on top. Put it in the fridge. The butter hardens on top, forming a cork, the jar will keep in the fridge for 3. You don't have to keep it long!
