Caviar Mushroom with Nuts

Mushroom caviar is a truly wonderful thing! If you have a jar of mushroom caviar in the fridge, you're a lucky man! Because mushroom caviar is, first of all, a great snack on toast, fresh bread, or just for fun; and second, add a couple of spoonfuls of mushroom caviar to your buckwheat porridge, stewed cabbage, boiled rice, etc. д., And you have a new dish; thirdly, mix mashed potatoes with mushroom caviar, - here you go and stuffing for pies and pancakes; stuff boiled eggs with mushroom caviar, - deliciousness incredible; add a little bit to the borsch, and it will play with new colors of flavor. Here is my version of wonderful mushroom caviar, the taste of which is complemented by the sweetness of carrots and onions, filled with the spicy aroma of walnuts and enhanced with soy sauce.

How to cook mushroom caviar with nuts step by step with photos

You can use any mushrooms, but wild mushrooms are best. I have frozen beech mushrooms.
We put the mushrooms in a pot, pour cold water, put on the heat, bring to a boil and cook, skimming the foam, for about 10 minutes. Rinse the mushrooms in a sieve and put them in a bowl. |

Pour the oil into a saucepan or a pot.
Peel onions and carrots and cut them coarsely enough, put them in a saucepan, put on the fire and stew under a lid, stirring occasionally, until the carrots are completely soft, about 25-30 minutes. |

Chop walnuts in a blender or coffee grinder.
If you want the nut particles to be felt in the caviar, grind a medium crumble, and I ground finely. |

Mushrooms and cooled vegetables, put them through the meat grinder and into the pan. Pour out of the saucepan the oil in which the vegetables were stewed. |

We mix everything well and put on medium heat. Roast for about 15 minutes, stirring occasionally. |

Remove the pan from the fire, add the ground nuts, pour the soy sauce, mix well.
You can add a clove of garlic, pounded through a press, to taste. |

Let cool our wonderful caviar and serve.
